Coste Rousse is located in the village of Malagas, in the heart of the Cotes de Thongue in the Languedoc. The Taix family produce a selection of white and red wines from 11 different varieties, grown to organic principles. This is a blend of mostly Chardonnay with 10% Viognier, fresh and bright, with notes of white fruits and minerality. A manual harvest was followed by hand selection, then the grapes destemmed and pressed under inert gas. The wine underwent cold fermentation after a light settling before being aged on the lees in cement tanks for six months. Vinified, aged and bottled without the addition of sulphites. B
